2 cups fresh pineapple chunks

1 cup Greek yogurt (plain or vanilla)

2 tablespoons honey or agave syrup

1 teaspoon lime zest

1 tablespoon lime juice

1/4 cup shredded coconut (unsweetened)

Fresh mint leaves for garnish (optional)

Prepare the Pineapple: In a medium bowl, combine the fresh pineapple chunks with lime juice and lime zest. Toss to coat evenly. Let sit for about 10 minutes to allow the flavors to meld.
