Zucchini and Cheddar Breakfast Bakes

2 medium zucchinis, grated

1 cup sharp cheddar cheese, shredded

4 large eggs

1/2 cup milk

1 cup all-purpose flour

1/4 cup grated Parmesan cheese

1/2 teaspoon baking powder

1/2 teaspoon garlic powder

1/2 teaspoon onion powder

1/2 teaspoon salt

1/4 teaspoon black pepper

1/4 teaspoon crushed red pepper flakes (optional)

1 tablespoon fresh chives, chopped (for garnish)

Preheat the Oven: Preheat your oven to 375°F (190°C) and grease a muffin tin or line it with parchment paper.

    Prepare the Zucchini: In a large bowl, grate the zucchinis and squeeze them to remove excess moisture. This step is crucial to avoid soggy breakfast bakes.

      Mix Wet Ingredients: In another bowl, whisk together the eggs and milk until well combined.

        Combine Dry Ingredients: In a third bowl, mix the flour, baking powder, garlic powder, onion powder, salt, black pepper, and red pepper flakes (if using).
