3 medium zucchinis, thinly sliced

4 medium tomatoes, thinly sliced

1 large onion, thinly sliced

3 cloves garlic, minced

1 cup freshly grated Parmesan cheese

1 cup shredded mozzarella cheese

1 cup breadcrumbs (preferably whole wheat)

1 tablespoon olive oil

1 teaspoon dried Italian herbs (oregano, basil, thyme)

Salt and pepper to taste

Fresh basil leaves for garnish (optional)

Instructions
 

Preheat the Oven: Preheat your oven to 375°F (190°C).

    Prepare the Vegetables: In a large mixing bowl, combine the sliced zucchinis, tomatoes, and onions. Add the minced garlic, olive oil, dried Italian herbs, salt, and pepper. Toss well to ensure all the vegetables are evenly seasoned.

      Layer the Bake: In a greased baking dish, start layering the vegetable mixture. Begin with a layer of zucchini slices, followed by a layer of tomato slices, then onions. Repeat the layering until all vegetables are used up, finishing with a layer of tomatoes on top.

        Add Cheese and Breadcrumbs: Sprinkle half of the grated Parmesan cheese over the top layer of tomatoes, followed by all of the shredded mozzarella. Finally, top with the breadcrumbs and the remaining Parmesan cheese.

          Bake: Cover the baking dish with aluminum foil and place it in the preheated oven. Bake for 25 minutes, then remove the foil and bake for another 15-20 minutes, or until the cheese is bubbly and golden and the vegetables are tender.

            Rest and Serve: Once out of the oven, let the gratin rest for about 10 minutes. Garnish with fresh basil leaves if desired and serve warm.
