2 cups shredded zucchini (about 1 medium zucchini)

1 ½ cups all-purpose flour

1 tsp baking powder

1 tsp baking soda

½ tsp salt

1 tsp ground cinnamon

½ tsp ground nutmeg

½ cup vegetable oil

½ cup unsweetened applesauce

1 cup granulated sugar

3 large eggs

1 tsp vanilla extract

½ cup chopped walnuts or pecans (optional)

For the Cream Cheese Frosting:

8 oz cream cheese, softened

½ cup unsalted butter, softened

4 cups powdered sugar

1 tsp vanilla extract

1-2 tbsp milk (as needed for consistency)

Preheat the Oven: Begin by preheating your oven to 350°F (175°C). Grease and flour a 9x5-inch loaf pan or line it with parchment paper for easy removal.

    Prepare the Zucchini: Grate the zucchini using a box grater or food processor. Place the shredded zucchini in a clean kitchen towel and squeeze out excess moisture; set aside.

      Mix Dry Ingredients: In a medium bowl, whisk together the flour, baking powder, baking soda, salt, cinnamon, and nutmeg. Set aside.

        Combine Wet Ingredients: In a large mixing bowl, combine the vegetable oil, applesauce, and sugar. Beat in the eggs, one at a time, mixing well after each addition. Add in the vanilla extract.
