1 medium zucchini (about 200g), finely grated

1 cup all-purpose flour

1/2 cup unsweetened cocoa powder

1 cup granulated sugar

1/2 cup brown sugar, packed

1/2 teaspoon baking powder

1/2 teaspoon baking soda

1/4 teaspoon salt

1 teaspoon vanilla extract

1/2 cup vegetable oil (or melted coconut oil)

2 large eggs

1/2 cup semi-sweet chocolate chips (plus extra for topping, if desired)

1/2 teaspoon cinnamon (optional for a warm spice twist)

Preheat your oven to 350°F (175°C). Grease an 8x8 inch baking pan or line it with parchment paper for easy removal.

    Prepare the Zucchini: Wash the zucchini and finely grate it using a box grater or food processor. Place the grated zucchini in a clean kitchen towel and wring out excess moisture to prevent sogginess in the brownies.

      Mix Dry Ingredients: In a large mixing bowl, sift together the flour, cocoa powder, baking powder, baking soda, salt, and cinnamon (if using). Stir until well combined.
