2 medium zucchinis, grated

1 teaspoon salt

1/2 cup all-purpose flour (or gluten-free flour)

1/4 cup grated Parmesan cheese

1/4 cup chopped green onions

1 large egg

1/2 teaspoon garlic powder

1/2 teaspoon paprika

1/4 teaspoon black pepper

1/4 teaspoon crushed red pepper flakes (optional for heat)

2 tablespoons fresh parsley, chopped

Olive oil, for frying

Sour cream or Greek yogurt, for serving (optional)

Instructions
 

Prep the Zucchini: Start by grating the zucchinis on a box grater. Place the grated zucchini in a clean kitchen towel or cheesecloth and sprinkle with salt. Let it sit for about 10-15 minutes to draw out excess moisture.

    Squeeze Out Water: After the rest period, gather the towel edges and twist to squeeze out as much water as possible from the zucchini. This step is crucial for crispy fritters!

      Combine Ingredients: In a large mixing bowl, combine the squeezed zucchini, flour, Parmesan cheese, green onions, egg, garlic powder, paprika, black pepper, red pepper flakes (if using), and parsley. Mix until all ingredients are well incorporated into a uniform batter.

        Heat the Oil: In a large skillet, heat a generous amount of olive oil over medium heat. You want enough oil to coat the bottom of the pan.

          Fry the Fritters: Once the oil is hot, use a tablespoon to scoop portions of the mixture and carefully drop them into the skillet.
