Zucchini Lasagna Rolls

Ingredients
  

3 medium zucchinis, sliced lengthwise into thin strips

1 cup ricotta cheese

1 cup shredded mozzarella cheese, divided

1/2 cup grated Parmesan cheese

1 cup marinara sauce (store-bought or homemade)

1 large egg

2 cloves garlic, minced

1 teaspoon dried oregano

1 teaspoon dried basil

Salt and pepper to taste

Fresh basil leaves for garnish (optional)

Instructions
 

Preheat the Oven: Preheat your oven to 375°F (190°C).

    Prepare the Zucchini: Lay the zucchini strips on a clean kitchen towel. Sprinkle lightly with salt and let them sit for about 15 minutes to draw out excess moisture. Pat dry with another towel.

      Make the Filling: In a mixing bowl, combine the ricotta cheese, half of the mozzarella, Parmesan cheese, egg, minced garlic, dried oregano, dried basil, salt, and pepper. Mix until well combined.

        Assemble the Rolls: Spread a thin layer of marinara sauce on the bottom of a 9x13 inch baking dish. Take a zucchini strip, place about 2 tablespoons of the ricotta filling at one end, and roll it up tightly. Place the roll seam-side down in the baking dish. Repeat with the remaining zucchini strips and filling.

          Add Sauce and Cheese: Once all the rolls are in the baking dish, pour the remaining marinara sauce over the top. Sprinkle the remaining mozzarella cheese over the sauce.

            Bake: Cover the baking dish with aluminum foil and bake in the preheated oven for 25 minutes. Remove the foil and bake for another 10-15 minutes, or until the cheese is bubbly and slightly golden.

              Cool and Serve: Allow the dish to cool for about 5 minutes before serving. Garnish with fresh basil leaves if desired.
